Cooking!

Does anyone have a favorite online recipe site? I've been using http://allrecipes.com/ because it's easy to navigate and has ratings. :) I still have this awesome chicken noodle soup recipe from this site that I want to try...someday

I'm planning to cook some kind of spiral pasta with cheese sauce dish for dinner for my family tomorrow. I got that Campbell's cheese sauce can, so I thought I'd use it.

Is 500 grams of spiral pasta too much for three people? (I'd probably need another can of Campbell's cheese sauce if 500gs is just right).

Thus far, my attempts at pasta have been...less than wonderful. Any easy-to-follow foolproof, any dummy can do it, tips on cooking pasta would be appreciated.

EDIT: Hmm, they make everything from scratch. Oh well, I'll just get ideas from the recipes and make my own Pam's Awesome (Hopefully) Spiral Pasta with Chicken and Cheese Sauce!

What have you been doing? And what type of pasta -- fresh or dried?

Um. The one that comes in a nice big see-through plastic packing bags?

They all look dry to me.

Oh they seem a bit soggy. Probably overcook it *grin*

Okay! Yep, you're using dried pasta. If it was fresh, it wouldn't be crunchy.

Since I can't stand mushy pasta, I think I can help here.

1. Forget what the package says about water. Just fill whatever you're using.

2. Bring water to a rapid boil.

3. Toss in pasta.

4. Start your timing from this point, not from when the water comes to a boil again.

5. Shave off 2 minutes from whatever time the package tells you.

6. Check it. I've heard various ways to check pasta, but I do the foolproof way -- I fish out a piece to sample. If it's still a little too hard for your tastes, let it boil for another minute. Repeat until you like it.

7. When you have the consistency right, strain it and viola! You have pasta.

Hope that helps!

Welcome!

As for recipe sites, I just wing it. Sometimes I use allrecipes, and sometimes I use foodtv.com's recipe search feature.

I mostly stick with foodnetwork.com for recipes. They're usually pretty good, and you can pick and choose if you want low fat or low carb or whatever.
